Andrés crafts this distinctive profile through a thoughtful, two-stage fermentation: whole cherries are first fermented in sealed tanks for 48 hours, then depulped and fermented again for another 24 hours to amplify floral complexity and sweetness. After fermentation, the beans are dried carefully on raised beds, preserving all of their natural sugars and delicate aromatics.

The result is a clear, expressive coffee with a honeyed mouthfeel and a refined floral character that’s both approachable and nuanced—perfect for those who love sweetness with depth and clarity in their cup.
